Cake Roll with Whole Japanese Mandarin Orange

- Serving: 1 cake
- Citrus (mandarin oranges) 5 pcs
- Fresh cream 100g
- Sugar 1 tbsp
- Sponge cake:
・Eggs 2 pcs
・Cake flour 60g
・Milk 1 tbsp
- Sugar syrup:
・Water 2 tbsp
・Sugar 1 tbsp
How to make
・Peel the citrus.
・In a bowl, beat the cream and sugar with a hand mixer.
・Place the sugar and water in a microwave-safe container and heat them for at least 50 seconds at 600W to make the syrup.
1Break the eggs into a bowl and beat them. Add the sugar and blend with a hand mixer until the mixture turns pale.
2Sift in the cake flour and then fold it in with a rubber spatula.
3Add the milk while there are still some dry pockets and fold it in. Pour the batter into the mold.
4Preheat the oven and bake for 12-14 minutes at 180ºC. Then, let the cake cool.
5Brush the surface of the cake with the syrup and spread it with the whipped cream.
6Top the cake with the oranges and roll it. Chill it in the refrigerator for at least 30 minutes.
Tips for Preparation
・Go easy on the cream so that the appearance and flavor of the oranges will stand out.
